CLASS OF 2024

Since arriving in Fort McMurray in 2015, Chef Umesh Singh has become a beloved fixture in the local culinary scene. Hailing from Uttarakhand, India, Chef Umesh’s journey to Fort McMurray began after winning a culinary competition that secured him a position at MacDonald Island Park. This marked the start of his deep connection to the community and his ongoing mission to share authentic Indian cuisine while giving back to the region that has embraced him.

With over two decades of international culinary experience, Chef Umesh’s career trajectory is nothing short of extraordinary. He honed his skills through a prestigious three-year Culinary Management program in New Delhi, which led him to work at five-star hotels in India and internationally renowned locations such as Dubai, Abu Dhabi, and Miami. His journey included playing pivotal roles in the openings of major hotels like the Intercontinental and Crowne Plaza Dubai Festival City and serving as a chef at the Yas Marina Formula 1 Hotel. His remarkable experience and adaptability across diverse culinary environments have shaped him into the culinary innovator he is today.

However, one of the most defining moments of his career came with the establishment of his own restaurant, Desi Meal Time, in Fort McMurray. Desi Meal Time has since become the most renowned Indian restaurant in the region, a testament to Chef Umesh’s dedication and expertise. He takes great pride in introducing the community to authentic Indian flavours, while also tailoring his dishes to cater to the local palate. His culinary vision is rooted in bringing international flavours to Fort McMurray and blending them with the community’s spirit.

Reflecting on the most rewarding aspects of his career, Chef Umesh notes that his journey from New Delhi to Dubai, and eventually Fort McMurray, demonstrates the power of persistence and adaptability. He’s proud of his competitive achievements, particularly winning a culinary competition against top chefs, including a notable contestant from Top Chef Canada. It was a career-defining moment that gave him the confidence to continue pushing culinary boundaries.

For Chef Umesh, the heart of his work goes beyond food—it’s about community. Desi Meal Time is not just a restaurant; it’s a hub that brings people together over a shared love for good food. “My family’s support has been crucial in everything I’ve achieved,” he shares. “Their belief in our vision has not only helped me succeed professionally but also helped us unite into the local community.”

In addition to running his restaurant, Chef Umesh is an active participant in community events. He has volunteered his time and skills to support the Asian Heritage celebrations at Fort McMurray High School, demonstrating his commitment to fostering cultural diversity in the region. He believes that sharing cultural knowledge and traditions, whether through food or community involvement, enriches everyone.

Looking ahead, Chef Umesh has big aspirations. He plans to expand Desi Meal Time and continue bringing innovative culinary ideas to the region. His personal and professional goals are aligned with his desire to give back. He aims to mentor aspiring chefs and use his business as a platform to create more opportunities for others in Fort McMurray. “We want to support and enrich the local community that welcomed me,” he says. “Using my skills and resources to contribute meaningfully is incredibly important to me.”

Chef Umesh also recognizes the challenges facing Fort McMurray today, including economic inequality and access to services. He believes that through collaboration and community-driven support programs, these challenges can be addressed. He sees himself playing a role in this by using his business to contribute to local initiatives and support programs aimed at improving opportunities for all residents.

His journey from working in five-star kitchens across the globe to establishing a successful restaurant in Fort McMurray speaks to his resilience, passion, and dedication to his craft. But for Chef Umesh, it’s about more than just the food. It’s about creating a lasting impact in the community and leaving a legacy of culinary excellence and community involvement.

“I’m incredibly grateful for the opportunities I’ve had, and I’m excited to continue contributing to the future development of Fort McMurray,” Chef Umesh says. His story is a testament to the power of pursuing one’s passions and the difference that dedication to community can make.
